Storage and Reheating Recommendations

Whether you're buying our baked goods days or weeks in advance, or want your leftovers to last (if there are any!), these are our recommendations to get the most out of your yummy choices. As with all pastry, refrigerating or freezing will add moisture and start to dry them out, but they'll still be quite enjoyable if stored and prepared to our tried-and-tested recommendations.

Once an order is delivered or picked up, it is now the customer's sole responsibility to maintain the quality and safety-assurance of each product.

Storing and Preparing Temperature--Controlled Pies

Temperature--controlled pies, such as custard, cream and some specialty pies, require refrigeration. These will be labeled with "SAFE HANDLING INSTRUCTIONS" on the labels, product descriptions, and/or purchase receipts.

 

Refrigerate: Keep these pies in the box in your refrigerator (typically 38--40°F) for up to 5--7 days from the creation date.

 

Freeze for Later Use: Place these pies (or slices) directly into the freezer, unwrapped (in the box is fine). Then, once frozen, wrap firmly with plastic wrap, followed by two layers of foil before returning them to the freezer for up to 4--6 weeks from their creation date.

Preparing for Consumption: If frozen, place the wrapped pie into the fridge to thaw overnight. Then, cut a slice and enjoy!

Storing and Preparing Shelf--Stable Pies

Shelf--stable pies, such as fruit, nut and confectionary, are best enjoyed at room temperature within 2-3 days of receipt. These will not have "SAFE HANDLING INSTRUCTIONS" included, since they don't require refrigeration, although we do recommend refrigerating most within 2-3 days of receipt, and for up to an additional 3--5 days.

Refrigerate: Keep these pies in the box in your refrigerator (typically 38--40°F) for up to a week from the time of taking delivery.

Freeze for Later Use: Place these pies (or slices) directly into the freezer, unwrapped (in the box is fine). Then, once frozen, wrap firmly with plastic wrap, followed by two layers of foil before returning them to the freezer for up to 4--6 weeks from creation date.

Preparing for Consumption: If frozen, place the wrapped pie into the fridge to thaw overnight, and enjoy cold, or reheat as recommended below. Or, place on the counter at least 4 hours to come to room temperature. Enjoy at room temperature the same day, or reheat using the following recommendations.

Do not refrigerate again after reheating or reaching room temperature - just freeze again, and follow the same process if there are leftovers.

Reheating a Whole or Partial Pie: If frozen, thaw your wrapped pie in the fridge overnight. Otherwise, unwrap and set your refrigerated pie on a baking sheet on the center rack in the oven. Proceed to set the temperature to 350°F, then cover the pie loosely with foil and bake 15-20 minutes (including pre-heating time), or until the internal temperature at the center registers 165°F.

Storing and Reheating a Slice: If you hid a slice from your spouse or kids, refrigerate or freeze in a quart-size airtight container or Ziploc bag. Once thawed in the fridge, we recommend just eating it cold (still yummy!), or microwaving the slice on a plate at high power 60 seconds for a one-eighth size slice, or 80 seconds for a one-sixth size slice.

Storing and Preparing Loaves and Pastries

Our loaves and pastries are best enjoyed within 3--5 days of when you take delivery. However, you can refrigerate any of them for an additional 3--4 days, or freeze them in plastic wrap and two layers of foil (just like our pies) for up to 2 months. We like to slice our loaves into 1-inch pieces, and individually wrap each slice (or each individual muffin, pastry, etc.) with plastic wrap before freezing in an airtight plastic container lined with foil.

 

Microwave a frozen slice or pastry, uncovered, for up to 60 seconds and enjoy immediately (you can also try the brown paper bag method), or place them in a toaster oven until warmed through. Keep in mind, no matter the type of reheating, they may come out with a slightly drier texture once they return to room temperature.

Storing and Preparing Cookies

Not all cookies are the same, but storing airtight at room temperature for up to 3 days is a great guideline. We don't recommend ever refrigerating baked cookies, since they will just dry out and crumble. If you do, though, keep them in an airtight container, and thaw to room temperature on the counter to enjoy.

 

If you wish to freeze cookies, place them in an airtight plastic container lined with foil, and freeze for up to 2 months - even better if you're willing to individually wrap each cookie tightly in plastic wrap. When ready to enjoy, place 1--3 frozen cookies on a plate and microwave 30-60 seconds for a fresh-baked taste, or put on a sheet in a preheated oven at 325°F for 5-7 minutes.
